There are different Hebrew words used for birds, mammals, fish and other living things. I wouldn't go so far as to say there is a theological or mystical significance in that, they may simply be variations of animals that are listed. The context is clear though, man is the crown of creation and most akin to God Himself (Jamieson, Commentary on the Old & New Testament, Volume 1, pp. 7-8).
