Over-the-Rhine is a place where a building owner can stumble upon huge caverns underneath a basement floor or find long-forgotten tunnels that travel far below city streets. Its present mysteries are attributable to a past that transcends the common story of how cities change over time: it is the story of how a clash between immigrants and "real Americans" helped rob Cincinnati of its image, its soul and its economy. In the 1870s, OTR was comparable to the cultural hearts of Paris and Vienna. By the turn of the last century, the neighborhood was home to roughly three hundred saloons and had over a dozen breweries within or adjacent to its borders. Fulfilling the fears of the temperance wing of the Know-Nothing movement, Over-the-Rhine would most frequently flex its muscle when it came to the issue that became known as "personal liberty." Over-the-Rhine's German-Americans could be divided in a number of ways, and the community had internal factions that disagreed on just about everything, but the most consistent way to bring them together as a mobilized force was to threaten their beer.
While there were a number of failed revolutionary and reform movements in Germanic states in the 1830s and 1840s, one German revolution succeeded spectacularly and changed the world: the lager revolution. For the first few thousand years of beer's history, it was made with yeast strains that ferment at the top of the vat. Lager beer used yeast strains that create a bottom-fermented brew. Unlike its predecessors, it also required fermentation at about forty degrees Farenheit. After it was made, it would also spoil if it wasn't kept chilled. Some of the best modern beers are porters and ales, and some early beers of these varieties may have been very good, but as a general rule the beer made prior to lager seems to have been inferior to the beer made after the introduction of lager yeast.
