After this book, I will try any recipe from Cooks Illustrated. I subscribe to their online magazine, too. The recipes in this cookbook that I've attempted have all been excellent. Cooks Illustrated (America's Test Kitchen on PBS-TV) specializes in food science, perfecting each recipe by dozens of trial and error methods, which they often explain to the reader in depth. The Pasta Amatriciana is to DIE for. From salads, through main courses, soups, to desserts, this is one super Italian cookbook, in my humble German-Swedish opinion.
